Sweet-n-Sour Spam!

YUP! You heard it right, spam! I'm sure you can substitute the spam for diced ham as well, but I've not yet tried it. Now I am no novice recipe writer, so I hope this makes sense to those who dare read or even try it. But like Ryan said in the other post, can't knock it unless you've tried it. It's strangely delicious!!! Ready or not, here it is :)

1 can Spam (diced into small pieces)
1/2 yellow onion, chopped
1/4-1/2 cup diced or sliced green peppers
2 Tbsp. veg oil

Put the 2 Tbsp of oil in a large sautee pan, add the diced spam. Cook the spam until browned, we like it a little crispy. Next turn down the heat and add the onion and green peppers, cook until the onions and peppers are softish.

1 cup hot water
2 cubes of chicken or beef bullion (I do one of each)
1 can pinapple tidbits or chopped pinapple (drained-though save 1/2 cup of the juice)
2 Tbsp. Soy sauce
1/4 cup brown sugar
1/4 cup white vinegar
2 Tbsp. cornstarch mixed with a little water to make a thin paste

Dissolve the 2 cubes of bullion into the hot water. Once the spam, onion, pepper mixture is cooked, add the water with dissolved bullion to the sautee pan. Next add the pinapple juice, soy sauce, brown sugar, vinegar. Mix it a bit and bring to a low boil on medium heat. Add the cornstarch liquid, and bring back to boil (usually happens quick!). Turn heat to low and add the drained pinapple, mixing it in well. Take it off the heat and it's done!!! Pour over Rice and enjoy!!!

Summer swimming lessons....

So it's swimming lessons time, and thankfully we are almost done, tomorrow is the last day. It has been hot and humid, so nice for the girls, not so nice for Mom and Carter. Madyson and Maycee are little fishes, I am so grateful they are not afraid of the water. I am amazed at the level they can swim at. I should've put Maycee in the next level up, the one she is in is way to simple for her. Oh well, there's next year.

This is not how Carter truely felt about swimming lessons, he wanted to be in the water with the girls, and honestly so did I. Maycee anxiously awaiting for them to start!

Normal Day in the life of the Beasley Family

This post is mainly for Grandma's and Grandpa's. I wanted them to see what we're doing throughout the day or at least the evening. For those of you that aren't Grandma's or Grandpa's, please feel free to check us out. Heck if you're feeling bold post a comment. Don't be shy. You all know you get giddy when you see someone has posted a comment. I do! I'll see someone has posted a comment and I drag Maria away from whatever she is doing so she can come see the comment. We even have a "we've got a comment dance." You know you all have one be honest.

Anyways, here is Madyson and Maycee in our backyard. Yes they are screaming, they wouldn't be Madyson and Maycee if they weren't. You know they have dog collars that shock dogs when they bark....? Teaches them to not scream...I mean bark.

They are pretty cute though when they play together. They are even cute when they don't, but really cute when they do.

So here is a tree. Maria will tell you it is a weed. I think it is a tree. It was growing in our front flower bed. The leaves look just like a tree we had in our back yard when I lived with my parents. So I dug it out and planted it in the back yard. (As I write Maria is yelling to me, "it is not a TREE, I'll just tell you!") Yeah well we'll see about that.

We fed the Elders tonight so we have 7 spots at the table. Not sure what we're going to do when we need another spot. Probably buy a new table...duh Ryan.

This is Maria's famous "Sweet and Sour Spam." Can't knock it unless you try it. It is good and very healthy to one's soul. If you'd like I can have Maria post the recipe for you on the blog.


These are the "Elders." Elder Glenn and Elder Ale. Some of you may know them as Mormon Missionaries or Jehovah Witnesses. They aren't Jehovah Witnesses just so you know. They are Mormons. Elder Ale has just been told he is going to eat Sweet and Sour Spam. He ended up eating three helpings.

This is how you water the lawn in Kansas. Most people that read this are in Utah, where the grass is green because everyone has a sprinkling system. Utah is a desert by the way. In Kansas we do our best to keep the grass green. When it stops raining about this time every year people just let their lawns die. Not because we don't care, but water here is double or triple what is costs in the desert, I mean Utah. Not sure why, just how it is.

Carter being a little boy, he sees dirt so he plays in it. For some reason he eats it, I am I boy and I don't remember eating dirt. I'm sure it never happened.

Maria taking it easy after a long day of cleaning up the house, taking the kids to swim lessons, feeding the kids, playing volleyball for 2 and a half hours, coming home, getting the kids in order, making a meal, cleaning it up, and being 21 weeks pregnant. She is awesome and I couldn't make it in life without her. She is a great strength to me and I love her. She makes our family go round. :)

Our Midwestern 4th of July...

Since the dawn of time...or since I was a little boy, the Beasley family has ALWAYS attended the Clearfield, UT parade. So when we moved to Kansas I figured every little town would have a 4th of July parade. I was wrong, there is really only one parade in the area, that is in Lenexa about 20 minutes away.

The first part of the parade is all canidates running for different offices in the area. Can't ever have to many VOTE FOR ME stickers. For goodness sakes people throw some candy!!! Look at this poor little boy...

There are train tracks right in the middle of the parade route. Lucky for the lady in the red corvette all dressed up in a Statue of Liberty costume a train came and she was able to sit in front of us for a good 5 minutes while the train passed. I'm sure she was sitting there thinking, "What am I doing here, or someone really owes me for this one."

We're just standing here waiting for the candy... They did finally get some candy thanks to the local New Life Church that was inspired to bring some candy.

We went to the Salazars for fireworks at the high school. We had a quick basketball game after we ate. This is me playing some ball with Elder Ale. He plays college ball at BYU Hawaii, he was suppose to let me slam it over him, but he just couldn't do it. At least I'll have a good picture of him when he's in the NBA.

We had a good 4th of July here in Kansas. However we really missed our families and hope they know how much we appreciate them.
